A walnut roll that fits the week

Orahnjača is a Croatian sweet yeast roll filled generously with ground walnuts. Although it looks like a special-occasion bake, most of the preparation is straightforward, and the two rising periods are largely hands-off. Start it on a quieter afternoon while preparing other meals for the week.

This version makes one substantial roll with a soft, enriched dough and a filling flavoured with honey, cinnamon, vanilla and lemon zest. Grinding the walnuts finely helps the filling spread evenly and keeps the spiral tidy. If the filling feels stiff after standing, loosen it with a small splash of milk; it should be spreadable rather than runny.

Planning and portioning tips

Allow the roll to cool completely before slicing, or the warm filling may drag through the crumb. For an organised breakfast or afternoon snack, cut it into individual portions and place baking paper between the slices before freezing. You can then thaw only what the household needs.

The roll is also convenient for packed lunches because it holds its shape and does not need icing. Serve slices as they are, or briefly warm them for a softer texture. For the neatest spiral, roll the dough firmly without compressing it and leave a small clean border around the filling.

Ingredients

  • 300 gplain flour, plus a little for dusting
  • 7 ginstant dried yeast
  • 40 ggranulated sugar for the dough
  • 4 gfine salt
  • 150 mlwhole milk, lukewarm
  • 50 gunsalted butter, melted and cooled slightly
  • 1medium egg
  • 200 gfinely ground walnuts
  • 70 ggranulated sugar for the filling
  • 3 gground cinnamon
  • 5 gfinely grated lemon zest
  • 100 mlwhole milk for the filling
  • 30 ghoney
  • 5 mlvanilla extract

Method

  1. Combine the flour, yeast, 40 g sugar and salt in a large bowl. Add the lukewarm milk, melted butter and egg. Mix into a rough dough, then knead for 8–10 minutes until smooth and elastic, using only a light dusting of flour if it sticks.

  2. Place the dough in a clean bowl, cover and leave in a warm, draught-free place for 60–75 minutes, or until roughly doubled in size.

  3. Meanwhile, combine the ground walnuts, 70 g sugar, cinnamon and lemon zest in a bowl. Warm the filling milk with the honey just until the honey dissolves, then stir in the vanilla. Pour this mixture over the walnuts and mix into a thick, spreadable paste. Leave to cool.

  4. Line a baking tray with baking paper. On a lightly floured surface, roll the risen dough into a rectangle approximately 30 × 40 cm. Spread the walnut filling evenly over it, leaving a 2 cm border around the edges.

  5. Starting from one long edge, roll the dough firmly into a log. Pinch the seam and ends closed, then place it seam-side down on the prepared tray. Cover loosely and leave to rise for 25–35 minutes, until visibly puffy.

  6. Heat the oven to 180°C. Bake the roll for 35–40 minutes, until deeply golden and firm underneath. If it browns too quickly, loosely cover it with baking paper for the final 10 minutes.

  7. Transfer the orahnjača to a wire rack and cool completely before slicing. Portion any slices intended for later in the week once fully cool.

Food safety

  • Because the dough contains egg, bake until there is no wet or gummy dough at the centre; an instant-read thermometer inserted into the bread should register at least 90°C.
  • Cool the roll completely before storing. Keep it in an airtight container at room temperature for up to 2 days, or freeze separated slices for up to 2 months.
